Jan Hartwig opened his restaurant JAN in Munich in October 2022 and only within a few months of cooking he had once again earned three Michelin-stars.

With his first own restaurant, he is not only fulfilling his long-cherished dream of becoming self-employed, but is also pursuing his goal of presenting top-class gastronomy in a contemporary ambience.

In his dishes, he reinterprets the DNA of German cuisine and translates it into new worlds of taste.

Vita und Auszeichnungen

Jan Hartwig VitaJan Hartwig startete seine Karriere 2000 mit seiner Kochausbildung im Restaurant Dannenfeld (ein Michelin Stern) in Braunschweig.

2003 arbeitete er bei „Pomp Duck and Circumstance“ in Berlin.

2005 arbeitete Jan Hartwig im Zwei-Sterne-Restaurant Kastell in Wernberg-Köblitz unter der Leitung von Christian Jürgens.

2006 wechselte er zu Klaus Erfort, um im Saarbrückener Drei-Sterne-Restaurant Gästehaus Klaus Erfort zu arbeiten.

2007 fing er an, im Drei-Sterne-Restaurant Aqua in Wolfsburg unter der Leitung von Sven Elverfeld zu arbeiten, wo er ab 2009 bis zu seinem Weggang 2014 Souschef war.

Im Mai 2014 übernahm Jan Hartwig seine erste Stelle als Küchenchef im Restaurant ATELIER im Münchner Hotel Bayerischer Hof. Bereits 2015 wurde das Restaurant mit zwei Michelin-Sternen und ab 2017 bis zu Hartwigs Weggang im Spätsommer 2021 mit drei Michelin-Sternen ausgezeichnet. Damit war kein deutscher Koch schneller als er. Jan Hartwig ist damit auch der erste Koch in München, der 25 Jahre nach Eckart Witzigmann drei Michelin-Sterne erhalten hat.

  • Jan Hartwig started his career with his chef training at Restaurant Dannenfeld (one Michelin star) in Braunschweig.
2003

  • Jan Hartwig worked at the two-star restaurant Kastell in Wernberg-Köblitz under the management of Christian Jürgens.
2006
  • He moved to work for Klaus Erfort at the two-star restaurant Gästehaus Klaus Erfort in Saarbrücken.
2007
  • He began working at the two-star restaurant Aqua in Wolfsburg under the management of Sven Elverfeld, where he was sous chef from 2009 until his departure in 2014. In 2009, the restaurant received three Michelin stars.
2014
  • In May Jan Hartwig took on his first position as head chef at Restaurant ATELIER at Munich’s Hotel Bayerischer Hof. As early as 2015, the restaurant was awarded with two Michelin stars and from 2017 until Hartwig’s departure in late summer 2021 with three Michelin stars. Thus, no German chef was faster than him. Jan Hartwig is also the first chef in Munich to receive three Michelin stars 23 years after Eckart Witzigmann.
